Restaurant Style Salsa

Now I KNOW ya’ll have seen this recipe all over the blogosphere.

I mean come on, it’s Pioneer Woman! If P-Dub posts something, it gets out there… FAST! She’s brilliant and her food is delish… and she lives on a ranch that has a kitchen that’ll make any woman green with jealousy! 😉

I’d seen this recipe time and time again but didn’t actually make it for the longest time. I’m typically more of a pico de gallo girl (all fresh ingredients - no cans involved)…

So naturally, I was a bit of a skeptic when it came to this canned tomatoes recipe… 

Well, we had a little Super Bowl get together and I wanted some easy items to throw together (and that could be made ahead).

I heard so many rave reviews about this salsa… so between that and the pure ease of the recipe I was sold.

Turns out I’ve been playing myself! This salsa is DELICIOUS. and EASY. We’re talking pulse it up in the blender or food processor kind of easy.

Why did I wait so long to try this? I’ll never know.

But now I have this little gem of a recipe and I’m surely keeping it around! 😉

Restaurant Style Salsa

Prep Time: 10 minutes

Total Time: 10 minutes

Easy peasy salsa that will please any crowd!

Ingredients:

1 can (28 Ounce) whole tomatoes with juice
2 cans (10 Ounce) Rotel (diced tomatoes and green chilies)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and chopped (remove seeds or omit if you don't like spice)
1/4 teaspoon Sugar
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/2-1 cup loosly packed cilantro
1 whole lime, juiced

Directions:

Note: this recipe makes a lot! Use a 12-cup food processor (or blender), process the ingredients in batches and mix together mixing bowl. (Lesson learned... my food processor is an 11 cup and leaked all over the counter! haha)

Add whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until desired consistency -- 10-12 pulses. Taste and add additional salt if needed.

Refrigerate for an least an hour (overnight is fine). Serve with tortilla chips.

    I love this salsa! It really does taste like it’s from a restaurant. I had the same problem with my food processor. It was a mess.

    Absolutely the best salsa. I always made mine with everything except the ro-tel. Adding that kicked it up to the right notch of absolute perfection.

    Yes, I too, learned the hard way about the capacity of my food processor when I first made this recipe. Delicious despite the mess that I made. I marked in the margin, use blender next time!!

    I posted a hot sauce recipe today that uses canned tomato too, it really is the best way to make it if you can’t get your hands on good fresh tomatoes. This recipe looks great also.
