I am a total veggie lover and one of my favorite tried and true methods for preparing them is oven roasting them.

It’s simple but more importantly, QUICK. When you have a HANGRY (Hungry + Angry) toddler who wants dinner like 10 minutes ago NOW… it comes in handy quite often. I pretty much always keep broccoli, brussels sprouts, sweet potatoes and/or asparagus on hand for such occasions.

Today, my friends, I’m going to tell you about a new take on an old classic: Oven Roasted Asparagus.

This one is roasted in fresh grated garlic, olive oil, salt and pepper.

I know, I know you might be thinking “Sounds pretty classic so far, Tina. So where’s the twist?”

Well… as soon as it comes out of the oven it is tossed with chopped pistachios which give it a delightful nutty crunch and then to brighten it all up and give it some ‘zing’ it’s topped with a squeeze of fresh lime juice. Sounds bizarre but you must DOOOO ITTTT. It’s so FRESH with a perfect amount of tang! Try it out before summertime is over… it’s the perfect side dish to anything coming off the grill (can you smell some citrus grilled fish??)!

Note: you can even make this ON the grill if you want to keep the cooking outdoors. Just create a little tray out of heavy duty foil (stack 2 sheets and roll the edges up on all 4 sides creating a little tray), prepare the asparagus like you would in the recipe, except toss with tongs 3-4 times throughout cooking so the asparagus doesn’t burn from the direct grill heat.

Roasted Asparagus with Garlic Lime and Pistachios

Yield: 4 servings

Prep Time: 5-10 minutes

Cook Time: 8-10 minutes

Total Time: 15-20 minutes

A fresh take on a classic: Roasted Asparagus.

Ingredients:

1 pound Dole Asparagus, trimmed
2 teaspoons olive oil
2 small garlic cloves, grated (or 1 large)
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
1 lime, for juicing
2 tablespoons chopped pistachios

Directions:

Preheat oven to 400º F. Line a rimmed baking sheet with foil and with non-stick cooking spray. Lay trimmed asparagus on prepared baking sheet and drizzle with olive oil and add grated garlic, salt, and pepper. Using your (clean) hands, gently toss until asparagus is coated with seasonings.

Place in preheated oven and bake for 8-10 minutes, tossing with tongs after about 5 minutes. Remove asparagus from oven when it is tender-crisp. Squeeze 1/2 of lime over the asparagus and 1 tablespoon of the nuts and toss to combine. Transfer to serving platter and sprinkle with remaining tablespoon of pistachios. Slice other half of lime into rounds or wedges and place on plater as garnish.
