Middle Eastern Chicken Wraps (as easy as it gets)

Sorry for taking the day off yesterday… I came down with a little something (and not a good something)! I’m pretty sure my eye watered ALL day, and that I went through an entire box of tissues blowing my nose at work haha NO. FUN. Anyhow, I was feeling pretty crummy when I got home and was not in the mood to cook dinner  (which is how you KNOW I’m not feeling too hot ;))

Anyhow, I walked into the house to this glorious spread:

Yah… I have the best husband ever!

He stopped by the Middle Eastern Market and picked up some of my absolute FAVORITES: fresh made pita, hummus, and the most GORGEOUS Kalamata olives (yes, I just referred to olives as gorgeous). Then he swung by Publix and snagged a hot Rotisserie Chicken, came home, and chopped up some lettuce and tomato from the fridge and VOILA! This baby was born:

Not one homemade thing and it was probably the best thing I ate all week (LOVE when that happens!)!! All it takes is a few fresh, quality ingredients and you have one heck of a meal! Thank you Mike for being the brains behind this operation!

If you need something fast, fresh, healthy, and delicious - this fits the bill! Man, I love Middle Eastern food… have I told you that before?? Oops… I have?! my bad… 😉

Note: If you don’t have a Middle Eastern Market or Restaurant nearby, you may want to whip up your own pita and hummus (as those are the critical parts of this dish & you don’t want to skimp on quality!).

The only thing I have left to say is this: Give yourself a break from cooking and whip this nutritious and delicious treat up ASAP!

Oh, yah and to cap off my meal, I curled up under my blanket and with another Hot Toddy (compliments of the hubs)… (Hot Toddy = Tea, Honey, Lemon, and Gentleman Jack… an old  fashioned cold remedy).

I am very blessed.

Yummy! I love meals from rotisserie. My fav chicken salad is made from the leftovers when we buy a rotisserie chicken.

That studio lighting set is so affordable! Are you pleased with it? Was it difficult to figure out?

I’m looking into options so I can save my blog this winter from terrible pictures 🙂

Wow, I wouldn’t even know that these weren’t natural light pics unless you showed us! I’ve been thinking about getting a couple of those Lowel Ego lights that a lot of bloggers use, but now I’m intrigued by this set up.

Of course, I’d probably have to get rid of my bed just to find a place for those in my apartment!

These wraps look great! I adore Middle Eastern food too, and often just buy an assortment of spreads from Whole Foods (hummus, tzatziki, baba ghanoush, harissa) and dip pita in them as my dinner!

I’m with the flu too. I can’t taste anything. Can you post or send me an e-mail with the recipe for the tea? That would be awesome. Thanks. BTW Rotisserie Chicken is the best! I use it for lasagna rolls among other things! But this looks great! I’m a fan for Middle Eastern food too!

    • Kristina replied: — December 2nd, 2011 @ 11:35 am

8 ounces water, 1 tea bag (i used chamomile), 1 ounce lemon juice, 1 ounce bourbon, and 1-1 1/2 TBS honey (to taste)…. heat water to near boil, steap tea for 3 minutes, remove tea bag and stir in remaining ingredients! Hope you feel better!

Can’t wait to see your post on them and the behind-the-scenes stuff (like the lovely umbrellas 😉 Thanks so much, and great job!

Tina looks great. We’re back from Georgia and needed to catch up on your posts. Looks like you are rubbing off on Mike cooking wise. One more thing I would add to this would be some Greek yogurt with a few cloves of pressed garlic mixed into it.

    Love Ya.
