Sweet and Spicy Peach Salsa

Hi friends! Thank you for bearing with me the last few weeks! It’s been CRAZY around here… BlogHer in Atlanta, DC (STILL need to do my re-cap), and then, as you already know, my beautiful niece made her debut! Still swooning over that sweet little face! Instead of racing home to cook after work, I’ve been bee-lining it over to my brother’s house to get some snuggle time with little Kate. Well, as promised I am BACK with some tasty treats starting with this:

Sweet and Spicy Peach Salsa (you can hold the jalapeno if you’re not into the spicy part). Holy. Cow. It is insanely delicious. I made this to top our crispy shrimp tacos last night (recipe tomorrow!) and to be honest wasn’t all that excited about it.

It was the hubs’ ideas to make a peach salsa and I went with it adding my favorite things (hello lime juice and jalapeno). I thought it’d be good but probably a little sweet for my liking. Well friends… I was SO wrong. This salsa fresca is beyond balanced. The sweet peach, the tart lime, the spicy jalapeno… YOWZA! We were eating this straight straight from the bowl as a dip for our tortilla chips!

This was out. of. this. world. Topping, dip, or straight from the spoon, you have GOT to try this! Peaches are in season so they are super sweet and ripe (and on SALE… holla!)! Go buy some, and make this. Now. 🙂

Now I love me some pico de gallo, but this salsa has jumped to my #1 spot as far as non-traditional salsa’s go! L.O.V.E.

Sweet and Spicy Peach Salsa

Yield: 6-8 servings

Prep Time: 15-20 minutes

Ingredients:

6 peaches, peeled pitted and diced (about 1 1/2 cups)
1 medium sized red bell pepper, seeded and diced (about 1 cup)
1 cup loosley packed cilantro, chopped
1/4 cup finely diced red onion
1 jalapeno, seeded and finely diced
1 clove garlic, minced
1-2 limes, juiced (i used 1 1/2 since they were juicy)
1/2 teaspoon salt

Directions:

Mix all ingredients together and serve as a topping or dip. Easy Peasy!

    This looks so lovely! I love the colors and flavors. I bet this would be great as a topping over salad as well. No dressing needed!

      mmm that would be a GREAT idea for the leftovers (umm that is if you can control yourself from not eating it all in one sitting hehe)
