Spicy Lettuce Wraps
Ingredients:
For the Meat:
2 TBS Olive Oil
1/2 Medium Onion (Chopped)
1 package of Ground Turkey Breast
(I used Jenny-O which is 1.25 lbs)
Salt & Pepper
Garlic SaltFor the Sauce:
2 TBS Peanut Butter- Smooth
1 TBS Mirin
2 TBS Rice Wine Vinegar
2-3 TBS Soy Sauce ( I Used Low Sodium)
2 TBS Teriyaki
A Dash (or 2) Red Pepper Flakes
A Dash of Sriracha (leave out if you can't stand the heat)Additional Ingredients:
Iceberg Lettuce Leaves
Chopped Salted Peanuts
Asian Cabbage Slaw Mix (I cheated here!)
(It's a package the comes with everything in it! Slaw, Toppings and Dressing - Just mix and serve as a topping for your lettuce wraps)
Bean Sprouts (optional)
Shredded Carrots (optional)Directions:
Heat Oil in a skillet over Medium-High Heat. Add chopped onions and allow to soften and begin to brown (3-4 minutes). Add the Ground Turkey breast cook completely (make sure no pink is left!). Season with Salt, Pepper, and Garlic salt.
Mix Sauce ingredients up in a small bowl (the peanut butter will be clumpy until it is heated). Pour over the meat mixture and stir to combine. The peanut butter will melt and mix with the sauce. I needed to add about a 1/4 cup water to thin the mixture out. You can also add more soy & teriyaki. Turn heat down to medium-low and cook for a couple of minutes.
When ready to serve, mix up the asian cabbage slaw (bag mix, baby!). Take an iceberg leaf and scoop some of the Meat mixture into it. Top with Cabbage Slaw and crushed peanuts. You may add a dash of soy sauce if you like.
Also: you can add any additional topping you like- I just kept this simple since we were crunched for time. This seriously came together in 15-20 minutes. Awesome!

Oh my gosh! We found out about that red sauce at a Chinese restaurant we ate at. My husband ate so much of it on wontons back to back that his eyes started watering…well being the smart a that he is he went to the grocery store and bought some because he loved it that much, haha! It takes all kinds. 🙂
