Garlic Lime Mojo Marinade

This is my absolute favorite marinade for Burrito Night. I marinate both Chicken & Skirt Steak in this gloriousness and then pull out the works for a “Build your own Burrito” bar. We always bring out the Tortillas, Cheese, Pico de Gallo, Guacamole, Sour Cream, Black Olives, Cilantro, Limes, Mexican Rice and Re-fried beans for one TASTY fiesta!

Garlic Lime Mojo Marinade

Ingredients:

5-6 Garlic Cloves (Grated)
Juice of 2-3 Limes
Lime Zest (1-2 teaspoons)
1/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1/4 Cup Mojo (Badia Brand)
1 tsp Cumin
1 tsp Chili Powder
1/2 tsp Garlic Salt
1/2 tsp Pepper
Dash (or 2 if you like it spicy) of Cayenne

Directions:

Place choice of meat (chicken or skirt steak) into a Large (Gallon size) Ziploc bag (Side note: I generally do 1 Ziploc of chicken and 1 Ziploc of skirt steak when I make this for a large crowd... Just do two batches of the marinade). Add all of the ingredients, close the Ziploc and push the mixture all over the meat. Refrigerate overnight. I usually grill the meat up and then cut the chicken into small cubes, and the steak into small bite-sized strips. It's the perfect for stuffing your Burrito!

Note: These measurments are just an estimate. I usually "wing it" when I make this, but always use the same ingredients. I happen to like lots of garlic, lime juice, and cayenne... Make it to your liking. You really can't go wrong.
